Vegan Quinoa Stuffed Bell Peppers

Ingredients
- •4 whole Red bell peppers
- •1 cup Quinoa
- •1 cup Black beans
- •1 cup Corn kernels
- •2 tablespoons Olive oil
- •1 teaspoon Cumin
- •1 teaspoon Paprika
- •0.5 teaspoon Salt
- •0.25 cup Fresh cilantro
Instructions
Preheat the oven to 375°F (190°C).
Cook quinoa according to package instructions (about 15 minutes).

While quinoa cooks, cut the tops off the bell peppers and remove seeds.
In a bowl, mix cooked quinoa, black beans, corn, olive oil, cumin, paprika, salt, and chopped cilantro.
Stuff each pepper with the quinoa mixture.
Place stuffed peppers in a baking dish and cover with foil.
Bake in the preheated oven for 20 minutes.
