Spicy Chickpea & Quinoa Bowl
This Spicy Chickpea & Quinoa Bowl is a hearty vegan meal packed with protein and flavor. The roasted chickpeas add a satisfying crunch while the quinoa provides a nutty base, all tossed in a zesty lime dressing.
Ingredients
- •1 cup quinoa
- •1 can canned chickpeas
- •1 large bell pepper
- •1 medium avocado
- •2 tablespoons olive oil
- •2 tablespoons lime juice
- •1 teaspoon cumin powder
- •1 teaspoon paprika
- •0.5 teaspoon salt
- •0.25 teaspoon black pepper
- •0.25 cup fresh cilantro (for garnish)
Instructions
Rinse the quinoa under cold water.
Combine quinoa with 2 cups of water in a pot and bring to a boil.

Reduce heat and simmer covered for 15 minutes until water is absorbed.

Preheat oven to 400°F (200°C).
Drain and rinse chickpeas, then toss them with olive oil, cumin, paprika, salt, and black pepper.
Spread seasoned chickpeas on a baking sheet and roast for 20 minutes until crispy.

Chop bell pepper and slice avocado.
Once quinoa is cooked, fluff it with a fork and mix in lime juice.
Assemble the bowls by adding quinoa, roasted chickpeas, bell peppers, and avocado slices on top. Garnish with fresh cilantro.
