Ingredients
- •1 cup quinoa
- •1 can coconut milk
- •1 cup bell pepper (chopped)
- •1 cup broccoli florets
- •2 tablespoons curry powder
- •3 cloves garlic (minced)
- •1 tablespoon olive oil
- •0.5 cup cilantro (for garnish)
Instructions
Rinse the quinoa under cold water.
In a pot, combine quinoa and 2 cups of water, bring to a boil, then cover and simmer for 15 minutes.
