Mango Coconut Quinoa Salad
A refreshing and nutritious salad combining sweet mango, nutty quinoa, and creamy coconut for a tropical delight.
Ingredients
- •1 cup Quinoa
- •2 cups Mango
- •0.5 cup Coconut flakes
- •0.25 cup Cilantro
- •2 tablespoons Lime juice
- •2 tablespoons Olive oil
- •0.5 teaspoon Salt
Instructions
Rinse the quinoa under cold water.
Combine quinoa and 2 cups of water in a pot and bring to a boil.

Reduce heat, cover, and simmer for 15 minutes until water is absorbed.

Fluff the quinoa with a fork and let it cool.
Chop mango into cubes.
In a large bowl, combine cooled quinoa, mango, coconut flakes, and cilantro.
Drizzle lime juice and olive oil over the salad; sprinkle with salt.
