Lamb Tagine

Ingredients
- •2 lbs lamb shoulder
- •1 cup dried apricots
- •0.5 cup slivered almonds
- •1 large onion
- •3 cloves garlic
- •1 tsp cinnamon
- •1 tsp cumin
- •1 tsp ginger
- •2 cups beef broth
- •2 tbsp olive oil
Instructions
Heat olive oil in a tagine or heavy-bottomed pot.
Brown the lamb shoulder on all sides. Remove and set aside.
Sauté onions and garlic until soft and fragrant.
Stir in cinnamon, cumin, and ginger.
Add the lamb back to the pot along with beef broth. Simmer for 1 hour.

Mix in dried apricots and continue simmering for another hour until lamb is tender.
Sprinkle slivered almonds over the tagine before serving.
