Lobster Risotto

Ingredients
- •4 lobster tails
- •1.5 cups arborio rice
- •2 medium shallots
- •3 cloves garlic
- •0.5 cup white wine
- •4 cups chicken broth
- •0.75 cup parmesan cheese
- •4 tbsp butter
- •2 tbsp olive oil
- •0.25 cup fresh parsley
- •1 tsp salt
- •0.5 tsp black pepper
Instructions
Cook lobster tails in boiling water for 8 minutes. Remove meat from shells and chop.

In a saucepan, heat olive oil and 2 tbsp butter. Sauté shallots and garlic until translucent.
Add arborio rice and cook for 2 minutes.
⏱️ 2 minutes
Pour in white wine and cook until absorbed.
Gradually add warm chicken broth, stirring constantly until rice is creamy and al dente.
Stir in parmesan cheese, remaining butter, lobster meat, salt, and pepper.
Cook for another 2-3 minutes until heated through.

Garnish with chopped parsley and extra parmesan before serving.
