Chicken Pot Pie

Ingredients
- •1.5 lb chicken breast
- •1 cup peas
- •2 medium carrots
- •4 tbsp butter
- •0.25 cup flour
- •1.5 cups chicken broth
- •1 cup heavy cream
- •1 sheet puff pastry
- •1 tsp salt
- •0.5 tsp black pepper
Instructions
Preheat oven to 400°F
Dice chicken, carrots, and peas into small pieces
In a large skillet, melt butter over medium heat
Add diced chicken and cook until no longer pink, about 5 minutes

Add carrots and peas, sauté for another 3 minutes

Sprinkle flour over the mixture and stir to combine
Slowly pour in chicken broth while stirring continuously to avoid lumps
Pour in heavy cream and stir until the sauce thickens

Divide the chicken and vegetable mixture evenly into individual ramekins
Cut puff pastry into squares large enough to cover each ramekin with an overhang
Place puff pastry over each ramekin, pressing the edges to seal
Brush pastry with egg wash for a golden finish
Bake for 20-25 minutes or until the pastry is puffed and golden brown
