Lactose-Free Veggie Frittata

Ingredients
- •8 eggs
- •1 cup bell peppers
- •2 cups spinach
- •1 red onion
- •1 cup cherry tomatoes
- •1 cup dairy-free cheese
- •2 tbsp olive oil
- •1 tsp garlic powder
- •0.5 tsp salt
- •0.25 tsp black pepper
Instructions
Preheat oven to 350°F (175°C)
In a skillet, sauté bell peppers, spinach, and red onion in olive oil until softened
⏱️ 5 minutes
Whisk eggs in a bowl and season with garlic powder, salt, and black pepper
Pour the egg mixture over the sautéed veggies in the skillet

Top with cherry tomatoes and dairy-free cheese
