Saffron-infused Golden Milk Panna Cotta

Ingredients
- â˘1.5 cups heavy cream
- â˘0.5 cup whole milk
- â˘1.5 tsp gelatin powder
- â˘0.5 cup sugar
- â˘0.25 tsp saffron threads
- â˘0.25 tsp turmeric powder
- â˘1 tsp vanilla extract
- â˘4 edible gold leaf
- â˘0.25 cup pistachios
Instructions
In a small bowl, combine gelatin with 2 tablespoons of water and let it bloom for 5 minutes
In a saucepan, heat heavy cream, milk, sugar, saffron, turmeric, and vanilla extract until steaming but not boiling
Add bloomed gelatin to the cream mixture and stir until completely dissolved
Strain the mixture into individual serving glasses or molds and refrigerate for at least 4 hours to set
Toast pistachios in a pan until fragrant, then crush them into a crumble
Once set, top each panna cotta with edible gold leaf and pistachio crumble before serving
