Quinoa Stuffed Bell Peppers

Ingredients
- •4 bell peppers
- •1 cup quinoa
- •1 medium onion
- •1 medium zucchini
- •1 medium tomato
- •1 can (15 oz) black beans
- •1 tsp cumin
- •1 tsp paprika
- •1 cup cheddar cheese
- •2 tbsp olive oil
Instructions
Preheat oven to 375°F
Cut the tops off the bell peppers and remove seeds
Cook quinoa according to package instructions
In a pan, sauté onion, zucchini, and tomato until soft
Add cooked quinoa, black beans, cumin, and paprika to the pan
Stir well to combine all ingredients
Stuff the bell peppers with the quinoa mixture
Place stuffed peppers in a baking dish
Top each pepper with cheddar cheese
Bake in the oven for 25-30 minutes until cheese is bubbly and peppers are tender
