Mediterranean Quinoa Salad

Ingredients
- •1 cup quinoa
- •1 cup cherry tomatoes
- •1 medium cucumber
- •0.5 cup kalamata olives
- •0.5 cup feta cheese
- •3 tablespoons olive oil
- •2 tablespoons lemon juice
- •0.25 cup fresh parsley
- •1 teaspoon salt
Instructions
Rinse the quinoa under cold water.
Cook quinoa in 2 cups of water until fluffy (about 15 minutes).

Chop cherry tomatoes and cucumber into bite-sized pieces.
In a large bowl, combine cooked quinoa, tomatoes, cucumber, olives, feta, olive oil, lemon juice, and parsley.
